Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Hearty Breakfast Bowl.

I made this hearty breakfast bowl for Sunday brunch. It is the perfect sharing dish or have it all to yourself if you have an appetite as big as I do!

It is made up of some ingredients I had in the fridge at the time but you easily substitute elements of the dish to suit your tastes.

Ingredients
  • 1 large potato (cut into cubes)
  • 1/2 small onion (diced)
  • 1/2 pepper (diced)
  • 2 slices slices of smoked bacon (cut into stripes)
  • 1 garlic clove (minced)
  • 1/2 tsp paprika
  • 1 tbsp dairy free cheese (grated)
  • 1 egg
  • 1 tbsp dairy free milk
  • 1/2 tsp dried basil
  • salt and pepper (for seasoning)
  • 1/2 avocado
  • 1 spring onion (cut into slices)
  • 2 cherry tomatoes (quartered)
  • sprinkle of chilli flakes
Instructions
  1. Bring a pan of salted water to the boil and add in the cubed potatoes
  2. Boil until tender, about 10 minutes
  3. Drain away the water
  4. Add the potatoes, a drizzle of olive oil, onion, pepper, garlic, bacon and paprika into shallow pan
  5. Cook over a medium heat for 10 minutes
  6. Stir in the dairy free cheese then transfer the potato mix to a serving bowl
  7. Whisk together the egg, dairy free milk, basil and seasoning
  8. Scramble the egg in a pan for a couple of minutes
  9. Top the potatoes with the scrambled egg, spring onion, tomatoes, avocado and a sprinkle of chilli flakes
