Hope you are all having a good week. It seems to have turned cold all of a sudden and I'm looking out my winter clothes and recipes! Every year I say I'm going to be organised with my Christmas recipes and start them in October - maybe this year I'll get round to it. I'm hoping to make some gluten and dairy free iced mince pies this weekend that I'll share with you in December.
Tonight's recipe is for a rich flourless chocolate cake. I've had this out a few times as it is quite easy to make it gluten and dairy free but don't often make it at home. My sister, brother-in-law and niece were round for dinner so I quickly put this recipe together and we enjoyed it for dessert.

Preheat the oven to 150 oC
Grease an 8" round cake tin
Place the chocolate and dairy free spread in a bowl over a pan of simmering water
Stir until melted
In a large bowl beat together the melted chocolate mix, caster sugar, cocoa powder and eggs
Pour into the cake tin and bake for 30 minutes
Remove from the oven and allow to cool for 10 minutes in the tin
Dust with icing sugar prior to serving
