Ingredients
  • 170 grams caster sugar
  • 2 eggs
  • 175 milliliters dairy free milk
  • 60 grams dairy free spread (melted)
  • 250 grams Christmas mincemeat
  • 300 grams gluten free self raising flour
Instructions
  1. Preheat the oven to 170 oC

  2. Grease and line a loaf tin

  3. Whisk together the caster sugar, eggs, dairy free milk and melted dairy free spread

  4. Stir in the gluten free flour and mincemeat

  5. Spoon into the loaf tin

  6. Bake for 50 minutes

  7. Remove from the loaf tin and allow to cool

  8. Dust with icing sugar before serving
