    For the sponge:
  • 50 grams dairy free spread
  • 50 grams caster sugar
  • 50 grams gluten free self raising flour
  • 1 egg
  • For the chocolate icing:
  • 60 grams dairy free dark chocolate
  • 10 grams dairy free spread
  • 15 grams dairy free white chocolate
  1. Preheat the oven to 180 oC

  2. Line a muffin tin with 4 paper cases

  3. Beat together the caster sugar and dairy free spread until light and fluffy

  4. Whisk in the egg

  5. Gently fold in the gluten free flour

  6. Half fill each paper cases with the cake mixture

  7. Bake in the oven for 20 minutes

  8. Allow to cool completely

  9. Melt together the dairy free dark chocolate and dairy free spread

  10. Mix until well combined and then spread on top of the cakes

  11. Melt the dairy free white chocolate and drizzle over the iced cakes
