Apple Custard Cake (Gluten & Dairy Free)

I'm definitely well into my Autumn inspired baking.  I've made some new soup recipes, a hot mulled apple drink and this comforting apple and custard cake.

The custard is baked into this cake with lovely pieces of apples, cinnamon and sultanas for the perfect autumn cake/dessert.

It seemed to be a hit with the family, my niece had a small piece and then cried for some more!  My mum tried to order one for her birthday cake - a bit premature as she was born in April.

Anyway if you love the taste of apple and custard then this cake is for you.

Ingredients
  • 200 grams dairy free custard (I used Alpro)
  • 25 og dairy free spread
  • 250 grams caster sugar
  • 4 eggs
  • 2 teaspoons cinnamon
  • 300 grams gluten free self raising flour
  • 50 grams ground almonds
  • 1 teaspoon baking powder
  • 80 grams sultanas
  • 2 medium sized eating apples (peeled, cored and diced)
Instructions
  1. Preheat the oven to 180 oC
  2. Grease an 8" by 8" cake tin
  3. Place 150g of the custard into a bowl with the dairy free spread and caster sugar
  4. Whisk in the eggs one at a time
  5. Stir in the cinnamon, flour, ground almonds, baking powder, sultanas and chopped apples
  6. Pour into the cake tin
  7. Place dollops of the remaining caster on top of the cake and swirl with a knife
  8. Bake for 45 minutes
  9. Allow to cool and then dust with icing sugar and cut into squares
