Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Apple Crumble Cheesecake.

I’m down in London for a few days with work and I’m always pleasantly surprised how easy it is to find gluten and dairy free things to eat.  I’ve been diagnosed for five years now and even in that short time it has come on leaps and bounds.

Tonight’s recipe is for a beautiful gluten and dairy free apple crumble cheesecake.  Every time I make a cheesecake I always declare it is my favourite one yet and this one is no exception! A crisp biscuit base, layers of apples, a fluffy cinnamon cheesecake and all topped off with a layer of baked crumble.

Ingredients
    For the base:
  • 100 grams dairy free spread (melted)
  • 200 grams gluten free digestive biscuits (crushed)
  • For the filling:
  • 2 medium sized golden delicious apples (peeled, cored and finely sliced)
  • 450 grams dairy free cream cheese
  • 200 grams caster sugar
  • 1.5 tablespoon gluten free plain flour
  • 2 eggs (separated)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon mixed spice
  • For the topping:
  • 30 grams gluten free plain flour
  • 25 grams gluten free oats
  • 45 grams brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons dairy free spread
Instructions
  1. Preheat the oven to 150 oC
  2. Grease a 9" round spring-form tin
  3. Crush the biscuits into fine crumbs and pour in the melted dairy free spread
  4. Press into the base of the tin
  5. Bake for 15 minutes
  6. Whisk together the dairy free cream cheese, caster sugar, gluten free flour, cinnamon, mixed spice and egg yolks
  7. In a separate bowl whisk the egg whites until they form stiff peaks
  8. Carefully fold the egg whites into the cream cheese mix
  9. Place the apple slices over the biscuit base
  10. Pour in the cream cheese mixture
  11. Bake for 20 minutes
  12. While the cheesecake is in the oven, make the crumble topping
  13. Place the flour, oats, brown sugar and cinnamon in a bowl
  14. Rub in the dairy free spread until it forms a crumble
  15. Sprinkle on top of the cheesecake and return to the oven for 30 minutes
  16. Allow to cool to room temperature then chill in the fridge for at least 4 hours
  17. Cut into slices and serve
