Ingredients
    For the cake:
  • 125 grams gluten free self raising flour
  • 1/2 teaspoon mixed spice
  • 1 teaspoon ground ginger
  • 90 grams caster sugar
  • 40 grams brown sugar
  • 1 egg
  • 70 milliliters vegetable oil
  • 120 grams apple sauce
  • For the apples:
  • 1 eating apple (peeled and diced)
  • 1/2 teaspoon ground cinnamon
  • 15 grams dairy free spread
  • 1 teaspoon brown sugar
Instructions
  1. Preheat the oven to 180 oC

  2. Line a 6" by 6" square tray bake tin with foil

  3. Place all the ingredients for the apples into a shallow pan and saute over a medium heat for 5 minutes then set aside to cool

  4. Mix together the egg, vegetable oil and apple sauce

  5. Stir in the gluten free flour, mixed spice, ginger and sugar

  6. Mix in the apples

  7. Pour into the traybake tin

  8. Bake in the oven for 35 minutes

  9. Allow to cool for 10 minutes then remove from the tin

  10. Cool completely and then cut into 9 squares
