Ingredients
    For the cupcakes:
  • 150 g dairy free spread
  • 150 g caster sugar
  • 3 eggs
  • 150 g gluten free self raising flour
  • 60 g dairy free chocolate chips
  • For the frosting:
  • 100 g dairy free dark chocolate (melted)
  • 50 g dairy free spread
  • 200 icing sugar
Instructions
  1. Preheat the oven to 180 oC and line a 8 hole muffin tin with paper cases

  2. Beat together the dairy free spread and caster sugar until light and fluffy

  3. Beat in the eggs one at a time and stir in the flour and dairy free chocolate chips

  4. Fill each muffin case a third full and bake in the oven for 20 minutes

  5. Remove from the oven and allow to cool completely

  6. Make the frosting by beating together the dairy free spread, icing sugar and melted dairy free dark chocolate

  7. Pipe onto the cupcakes
