- 1 tablespoon olive oil
- 2 chicken breasts (cut into small cubes)
- 2 garlic cloves (minced)
- 1/4 teaspoon chilli flakes
- 1 onion (diced)
- 1 carrot (diced)
- 1 courgette (diced)
- 100 grams button mushrooms (sliced)
- salt and pepper for seasoning
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 950 milliliters chicken stock
- Heat a drizzle of olive oil in a large saucepan over a medium heat
- Add in the garlic, chilli, onion, carrot, courgette and mushroom
- Saute for 5 minutes
- Stir in the thyme, rosemary and chicken stock
- Bring to the boil
- Add in the chicken and simmer for 15 minutes
- Season to taste with salt and pepper
- Serve and enjoy
