Ingredients

medium sized sweet potatoes
(peeled and diced)

tomatoes
(quartered)

courgettes
(thickly sliced)

onion
(diced)

clove
garlic
(crushed)

chilli flakes

litre vegetable stock
2
tsp
oregano
2
tsp
parsley
salt and pepper
(for seasoning)
Instructions

Heat a drizzle of olive oil in a large pan on a medium heat

Add the onion, garlic and chilli and cook for 2 minutes

Add the sliced courgettes and cook for a further 2 minutes

Add in the tomatoes and sweet potato and cook again for 2 minutes

Pour in the vegetable stock and simmer for 25 minutes

Add in the oregano and parsley and season to taste

Blend the soup until smooth
