salt and pepper for seasoning

red pepper

small red onion

spring onions

large handful of salad

gluten and dairy free salad dressing

water melon cubes

Instructions

Whisk together the lime juice, tamari, peanut butter, water, garlic, ginger and chilli flakes

Season to taste

Heat a drizzle of oil in a shallow pan over a medium heat

Add the onion and pepper and sauté for 5 minutes

Stir in the cooked rice noodles and dressing

Cook for 2 minutes then set aside to cool

Divide the noodles between your two tubs and top with the spring onion and peanuts

Fill the rest of the tub with the salad, salad dressing and your fruit
