Ingredients
    For the pulled pork:
  • 900 g pork shoulder
  • 1 tsp light brown sugar
  • 1 tsp paprika
  • 2 tsp chilli powder
  • salt and pepper for seasoning
  • 2 tsp garlic paste
  • For the BBQ sauce:
  • 120 ml white wine vinegar
  • 20 g light brown sugar
  • 1 tsp chilli powder
  • 1 tsp tomato puree
  • salt and pepper for seasoning
  • For the coleslaw:
  • 1/2 small red cabbage (shredded)
  • 1 small red onion (finely sliced)
  • 1 carrot (grated)
  • salt and pepper for seasoning
  • 125 g dairy free mayonnaise
  • 1 tbsp white wine vinegar
  • 1 tsp chives
  • To Serve:
  • 6 gluten free burger buns
  • salad leaves
Instructions
    To make the pulled pork:
  1. Spread the garlic paste on the pork shoulder
  2. Mix together the sugar, paprika, chilli powder and season with salt and pepper
  3. Rub onto the pork shoulder
  4. Cook in the slow cooker low for 6-8 hours until the pork is tender enough to shred
  5. Remove any fat/rind and shred the pork using two forks
  6. To make the BBQ Sauce:
  7. In a small saucepan add the vinegar, sugar, chilli powder, tomato puree and season to taste
  8. Bring to the boil and simmer for 2 minutes
  9. Stir through the pulled pork
  10. To make the coleslaw:
  11. Mix together the mayonnaise and vinegar
  12. Season with salt and vinegar
  13. Stir in the cabbage, onion, carrot and chives
