Hello everyone, welcome to my latest recipe for Self Saucing Chocolate Peanut Butter Pudding.

Autumn definitely seems to be upon us now, the weather was ridiculously windy and rainy in Scotland yesterday.  I’ve started to make some more homely autumn recipes like this self saucing chocolate peanut pudding.

Self saucing puddings always look crazy when you are making them - it just doesn’t seem right to pour all that water over uncooked cake batter.   Luckily something magical happens in the oven and hey presto you end up with a beautiful sauce and a light sponge.

I quite like puddings like this when people are round for dinner because they are quick to put together and can bake in the oven ready to serve after you have finished your main - cuts out any faffing around from more intricate dessert recipes.  I think I  might try a lime version of a self saucing pudding for my next experiment.

Ingredients
    For the sponge:
  • 35 g dairy free spread
  • 15 g peanut butter
  • 50 g brown sugar
  • 1 medium banana (mashed)
  • 2 eggs
  • 100 ml dairy free milk
  • 125 g gluten free self raising flour
  • 25 g cocoa powder
  • 50 g dairy free dark chocolate (roughly chopped)
  • 20 g peanuts (chopped)
  • For the sauce:
  • 25 g peanut butter
  • 50 g brown sugar
  • 15 g cocoa powder
  • 125 ml boiling water
Instructions
  1. Preheat the oven to 180 oC
  2. Grease a casserole dish
  3. Melt the peanut butter and dairy free spread together in a small saucepan over a low heat
  4. Whisk together the peanut butter mix, mashed banana, eggs and milk
  5. Mix in the flour, brown sugar, cocoa powder, chocolate chunks and peanuts
  6. Pour into the casserole dish
  7. Make the sauce by stirring together the boiling water, peanut butter, sugar and cocoa powder
  8. Carefully pour into the casserole dish
  9. Bake for 40-45 minutes
  10. Serve with dairy free ice cream
