For the salad dressing:

Dijon mustard

apple cider vinegar

honey

olive oil

salt and pepper for seasoning
Instructions

Place a drizzle of olive oil in pan and ass the cashew nuts and paprika

Cook for about 5 minutes then set aside to cool

Whisk together all the ingredients for the salad dressing

Place all the salad ingredients in a bowl and dress right before to serving
