For the cookies:

For the filling:

peanut butter
Instructions

Preheat the oven to 180 oC

Beat together the caster sugar, brown sugar, peanut butter, milk, oil, vanilla extract and egg

Stir in the flour, xanthan gum, baking powder, salt and chocolate chips

Line 2 baking sheets with parchment paper

Place teaspoons of the mixture on the baking sheets, allowing room for the cookies to spread

Bake for 15 minutes

Allow to cool completely

Sandwich the cookies together with either peanut butter, chocolate spread or both!
