Ingredients
  • 2 eggs (beaten)
  • 2 tablespoons dairy free milk
  • 1 teaspoon vanilla extract
  • 200 grams gluten free self raising flour
  • 150 grams caster sugar
  • 5 tablespoons dairy free natural yoghurt
  • 50 grams strawberries (chopped)
  • For the mango frosting:
  • 200 grams icing sugar
  • 75 grams dairy free spread
  • 80 grams mango
  • strawberries (for decorating)
Instructions
  1. Preheat the oven to 180 oC, grease and line a 900g loaf tin

  2. Beat together the eggs, dairy free milk and natural yoghurt

  3. Fold in the chopped strawberries and spoon into the loaf tin

  4. Bake for 50 minutes

  5. Remove from the loaf tin and allow to cool before frosting

  6. Make the frosting by beating together the icing sugar and dairy free spread until light and fluffy

  7. Puree the mango in a blender and add 1-2 tablespoons into the frosting

  8. Spread on top of the cooled loaf cake and top with fresh strawberries
