For the fish:
- 4 hake portions
- salt and pepper for seasoning
- 1 garlic clove (minced)
- 1 tablespoon olive oil
- 2 teaspoons paprika
- 1 tablespoon lemon juice
For the mango salsa:
- 400 grams tomatoes (diced)
- 1 large ripe mango (peeled and diced)
- 1 small onion (diced)
- 2 teaspoons coriander leaf
- 2 tablespoons lime juice
- 1 small chilli (deseeded and finely sliced)
- 1 garlic clove (minced)
- salt and pepper to taste
- Make the coating for the fish by mixing together the olive oil, garlic, paprika, lemon juice and seasoning
- Coat the fish in the marinade
- Grill the fish in the frying pan in a little olive oil over a medium heat for 3 minutes on each side
- To make the mango salsa combine all the ingredients in a medium sized bowl
- Serve the hake with the mango salsa
