Hello everyone, today’s recipe is for a brand new dinner idea – Gluten Free and Dairy Free Mango Pulled Pork Tacos. I’m so glad it is the weekend, I don’t know why but this week seems to have lasted forever. I got my COVID vaccine and while I’m really grateful I must admit to feeling a little rough for a couple of days. That was followed up by a routine appointment at vascular surgery . I’ve been having a few problems so have to go in for some exploratory heart surgery to see what can be done. Fingers crossed it wouldn’t be too long until I get the appointment through for that.
Tacos are a regular on the dinner menu for me. You’ll probably notice that I have quite a few different recipes for them on this site. Today’s recipe is these delicious pulled pork tacos. They are really easy to make as you just pop the pork into the slow cooker and the BBQ sauce only takes a couple of minutes to make. It is quick to put together as all the extras are cold and easily prepped. You can also add in whatever you like to your pulled pork tacos my fillings are just suggestions.
I’ve been doing a little planning for the next few weeks of the website. This weekend I need to make my Easter cupcakes so I can share the recipe with you next week. I’ve also got some new exciting recipes coming up including a chicken club pasta salad, strawberry shortcake cobbler and a naan bread pizza. Of course all these new recipes will be gluten and dairy free.

Warm the taco shells in the microwave for 30 seconds
Fill the taco shells with the pulled pork, guacamole, coleslaw, mango, cheese and spinach
