Try out this fun recipe for Gluten and Dairy Free Mango Pulled Pork Tacos - the pork can cook in the slow cooker during the day.

    For the pulled pork:
  • 900 grams pork shoulder
  • 1 tablespoon light brown sugar
  • 1 teaspoon paprika
  • 2 teaspoons chilli powder
  • salt and pepper for seasoning
  • 2 teaspoons garlic paste
  • For the BBQ sauce:
  • 120 milliliters white wine vinegar
  • 20 grams light brown sugar
  • 1 teaspoon chilli powder
  • 1 tablespoon tomato puree
  • salt and pepper for seasoning
  • To serve:
  • 8 corn taco shells
  • 4 tablespoons guacamole
  • 4 tablespoons dairy free cheese (cubed)
  • 4 tablespoons dairy free coleslaw
  • 1 mango (peeled and diced)
  • 4 handfuls of spinach
    To make the pulled pork:
  1. Spread the garlic paste on the pork shoulder
  2. Mix together the sugar, paprika, chilli powder and season with salt and pepper
  3. Rub onto the pork shoulder
  4. Cook in the slow cooker low for 6-8 hours until the pork is tender enough to shred
  5. Remove any fat/rind and shred the pork using two forks
  6. To Make the BBQ Sauce:
  7. In a small saucepan add the vinegar, sugar, chilli powder, tomato puree and season to taste
  8. Bring to the boil and simmer for 2 minutes
  9. Stir through the pulled pork
  10. To Serve:
  11. Warm the taco shells in the microwave for 30 seconds

  12. Fill the taco shells with the pulled pork, guacamole, coleslaw, mango, cheese and spinach
