Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Chicken and Vegetable Pasta Bake.

I’m looking forward to this week - it is my niece and I’s birthday and I have a few days off work so we can do some fun things to celebrate.  If the weather is good on Thursday we are planning a trip to the zoo - last time I was there they catered really well for special diets.

I can still be a bit of a child when it comes to eating my green vegetables.  I prefer broccoli  like this when it is chopped up through the dish - I don’t think I’ll ever grow up!  I’ve made this pasta bake with a dairy free creamy sauce, chicken, onion, peppers, broccoli and mushrooms.  Leftovers from this dish also made a great packed lunch for work the next day.

Description

A creamy pasta bake packed full of chicken and vegetables

Ingredients
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • chilli flakes
  • 2 chicken breasts (diced)
  • 1 onion (diced)
  • 1 pepper (diced)
  • 1/2 head of broccoli (cut into small pieces)
  • 150 grams mushrooms (sliced)
  • 250 milliliters dairy free cream
  • 75 grams dairy free cheese (grated)
  • 225 grams gluten free pasta
  • satl and pepper (for seasoning)
Instructions
  1. Cook the pasta per the instructions on the packet and set aside

  2. Add the olive oil to a pan over a medium heat

  3. Add in the garlic, chilli and chicken

  4. Sauté for 5 minutes

  5. Add in the onion, peppers, broccoli and mushrooms

  6. Sauté for 5 minutes or until the vegetables are tender

  7. Pour in the cream and season to taste

  8. Cook for a couple of minutes

  9. Stir in 50g of the dairy free cheese

  10. Heat the grill to high

  11. Stir the cooked pasta into the sauce

  12. Pour into a large casserole dish and top with the rest of the grated cheese

  13. Grill for a couple of minutes

  14. Serve topped with some fresh basil
