Black Forest Cupcakes (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Black Forest Cupcakes.

I made these little cupcakes a few weeks ago when I had my family over for dinner.  I haven't really been doing a lot of baking recently as it has been too hot to have the oven on.  In the next few weeks you are going to see the non-bake dessert recipes appear on my site that I have been doing instead. It's been all about the no bake peanut butter cheesecake and chocolate banoffee pie in my house.

These cupcakes have a fluffy chocolate sponge with a surprise middle of berry jam topped off with vanilla cream and a cherry.

Ingredients
    For the cupcakes:
  • 150 g dairy free spread
  • 150 g caster sugar
  • 3 eggs
  • 150 g gluten free self raising flour
  • 1 tbsp cocoa powder
  • 1 tbsp berry jam
  • For the frosting:
  • 200 g dairy free spread
  • 100 g icing sugar
  • sprinkle of cocoa powder
  • 8 cherries
Instructions
  1. Preheat the oven to 180 oC
  2. Beat together the dairy free spread and caster sugar until light and fluffy
  3. Beat in the eggs one at a time
  4. Stir in the flour and cocoa powder
  5. Half fill 8 muffins cases with the mix
  6. Put a spot of jam in the centre of each muffin case
  7. Cover with the remaining cake batter
  8. Bake for 25 minutes
  9. Remove from the oven and allow to cool completely
  10. Make the frosting by beating together the dairy free spread and icing sugar
  11. Pipe onto the cupcakes
  12. Sprinkle with cocoa powder and a top with a cherry
