Hello everyone, welcome to my latest recipe for Gluten and Dairy Free White Chocolate and Strawberry Cheesecake.
I’ve been wanting to make a no-bake egg free cheesecake for a while now. I usually stick with a New York style baked cheesecake but my sister is a fan of the fluffier no-bake version.
I’ve made this with dairy free white chocolate and dairy free cream which are now both available in the supermarket. I popped into Real Foods to pick up the dairy free whipping cream. If your local health food store doesn’t have it then you can easily order it online. I used SoyaToo.

A beautiful no bake cheesecake with white chocolate and fresh strawberries
Preheat the oven to 160 oC
Grease a 11m by 5 cm rectangle flan tin
Mix together the crushed biscuits and melted spread
Press into the flan tin base and up the edges
Bake in the oven for 12 minutes and then set aside to cool
Whisk the dairy free whipping cream until light and fluffy
Whisk in the icing sugar and dairy free cream cheese
Fold in the melted dairy free white chocolate
Spread on to the cooled biscuit base
Top with the chopped strawberries and then chill in the fridge for 2 hours
I topped mine with a drizzle of whte chocolate before serving
