Ingredients
    For the sponge fingers:
  • 1 egg separated
  • 35 grams caster sugar
  • 25 grams gluten free plain flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • For the custard:
  • 300 milliliters dairy free milk
  • 1 teaspoon caster sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • Other:
  • 350 grams strawberries halved
  • 1 sachet strawberry jelly crystals
  • 300 milliliters dairy free whipping cream or coconut cream
Instructions
    To make the sponge fingers:
  1. Preheat the oven to 200 oC and line two baking sheets with parchment paper
  2. Beat the egg white until peaks start to form
  3. Whisk in 1 tablespoon of caster sugar and continue whisking until stiff peaks form, set aside
  4. In a separate bowl whisk together the egg yolk and remaining caster sugar
  5. Stir in the flour, baking powder and vanilla extract
  6. Gently fold in the whisked egg white and place into a piping bag with a large round nozzle
  7. Pipe 12 sponge fingers onto the prepared baking sheets
  8. Bake in the oven for 8-10 minutes
  9. Allow to cool to room temperature before using
  10. To make the trifle base:
  11. Place the sponger fingers and half the strawberries in a large bowl or trifle dish
  12. Make the jelly per the instructions on the packet and pour over the sponge
  13. Place in the fridge for a couple of hours until set
  14. To make the custard:
  15. In a medium sized heat proof bowl whisk together the egg yolk and caster sugar
  16. Heat the milk in the saucepan until it comes to the boil
  17. Pour the hot milk into the bowl with the eggs and sugar
  18. Whisk until fully combined
  19. Pour back into the pan and return to the heat
  20. Add in the vanilla extract
  21. Cook on a low heat until the custard thickens, about 5 minutes
  22. Set aside to cool completely
  23. To assemble the trifle:
  24. Spoon on the custard
  25. Whip the coconut cream or dairy free cream
  26. Spread on top of the trifle and top with the rest of the strawberries
  27. Chill in the fridge for at least an hour before serving
