Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Strawberry Shortcake.
I know I say this all the time but strawberry shortcake has been on my list of things to make for ages. The theme of lockdown for me has definitely been photographing all those must make recipes and ticking them off my to do list.
It is pretty easy to make as you can prep the shortcake biscuits ahead of time and assemble the strawberries and cream just before you serve. You can purchase the dairy free cream online - I've posted the details at the bottom of the recipe.
If you only want to make a couple of strawberry shortcakes you can make the dough, stamp out the shortcake biscuits and place the rest of the dough in the freezer. The remaining dough can be used to make plain shortcake biscuits or you can sandwich them together with jam or your favourite flavour of frosting.

Beat together the icing sugar and dairy free whipping cream
Sandwich the biscuits together with the whipped cream and strawberries
