Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Orange and Coconut Traybake.
Hope you all had a good day - I was lucky enough to avoid the worst rain ever on the way home. There was water literally pouring down the road when I wandered up to the train station. This is rare as I usually am on the way to the train in the worst weather and it seems to follow me for the walk home!
I have a few new baking recipes coming up over the next few weeks including raspberry bakewell cake, orange spiced cupcakes and cherry frangipane tarts. I made this orange and coconut tray bake a couple of Saturdays ago but unfortunately it was a pretty dull day outside so the photo doesn't have a lot of life to it. Luckily it tasted amazing - lots of zesty orange and coconut, also you can freeze this cake before you ice it. It also works well with any zesty fruits (lime, lemon etc. You can make it as a loaf cake or round cake but it might take a little longer to bake.

Preheat the oven to 180 oC
Whisk together the yoghurt, eggs, zest and vegetable oil
Stir in the flour, caster sugar and coconut
Pour into a lined 8” by 8” cake tin
Bake for 35 minutes
Remove from the tin and allow to cool completely
Make the glaze by stirring together the icing sugar and orange juice
Drizzle over the cake and sprinkle with desiccated coconut and orange zest
