Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Meal Prep Breakfast Box.

This breakfast box is based on one of the options that I saw in Starbucks but isn't gluten free.  I thought it was a nice selection of nibbles for breakfast so I've put together my own version.

When I make this for my breakfast I like to eat half at home and then finish it at work.  I made two of these boxes on Sunday night and ate one on Monday and one on Wednesday.  

When I was in London last week I visited a gluten free bakery called Beyond Bread.  It is a short walk from Oxford Street and is a lovely place to have a quiet lunch in.

My friend and I went for lunch after a morning of shopping - we enjoyed pulled pork sandwiches and honey parsnip soup.  Well worth checking out if you are in the area.

Ingredients
  • 2 eggs
  • 40 g dairy free cheese (I used Violife)
  • 4 tbsp gluten free granola (I used Made Good GF DF granola bites)
  • 2 tbsp peanut butter
  • 1 apple
  • 1 tsp lemon juice
  • 4 tbsp grapes
Instructions
  1. Place the eggs in a small pan of water and boil for 10 minutes
  2. Place in a bowl of cold water then peel the eggs and cut into slices
  3. Place in your tubs, I sprinkled mine with a little salt, pepper and paprika
  4. Cut the cheese into little cubes and divide between the two boxes
  5. Core the apple and cut into slices then toss in the lemon juice, this keeps the apple fresh
  6. Divide the peanut butter, granola, apple and grapes between the two tubs
  7. Seal with a secure lid and place the tubs in the fridge
