Ingredients
  • 10 grams dairy free spread
  • 50 grams caster sugar
  • 1 egg
  • 75 grams light brown sugar
  • 170 grams gluten free plain flour
  • 1 teaspoon vanilla extract
  • 120 grams dairy free chocolate chips
  • 24 mini marshmallows
Instructions
  1. Preheat the oven to 180 oC and line two baking sheets with parchment paper
  2. Cream together the dairy free spread, caster sugar and brown sugar until light and fluffy
  3. Mix in the egg and gluten free flour
  4. Stir through the dairy free chocolate chips and marshmallows

  5. Divide the mixture into 12 balls of cookie dough
  6. Place 6 cookies on each tray and flatten slightly
  7. Bake for 12 minutes
  8. Allow to cool on the baking sheet for 10 minutes and then transfer to a wire cooling tray
