Iced Mince Pies (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Iced Mince Pies.  

I can't believe it is now December and I'm sharing my first Christmas recipe of 2020.  I don't have any Christmas decorations up yet - although most of my neighbours do so I'm feeling a bit like the odd one out.  I do have my advent calendar - I don't think I'll ever grow out of that.  I do have a preference for kind of vintage ones with pictures rather than ones with little chocolates or whatever else.

My first Christmas recipe of 2020 is for iced puff pastry mince pies.  Every year I like to make at least one batch of homemade mice pies and I like to try something different each year.  Last Christmas it was little mincemeat tartlets and the year before that I think it was mince pie bites with a crumble topping.  As you can now buy gluten and dairy free puff pastry sheets quite easily in the supermarket I thought I would share a quick and easy recipe for iced mince pies.

Description

Christmas mince pies made with puff pastry and a drizzle of icing

Ingredients
  • 1 sheet gluten free pastry (I used Jus Rol)
  • 1 egg beaten
  • 150 grams Christmas mincemeat
  • 5 tablespoons icing sugar
  • 6 teaspoons water
  • Christmas sprinkles
Instructions
  1. Preheat the oven to 180 oC
  2. Roll out until the sheet of pastry
  3. Cut out 12 equal sized circles
  4. Spread the mincemeat onto six of the pastry circles leaving about 1cm of space around the edge of the pastry, this stops the filling leaking everywhere when you bake the pastries

  5. Brush the space you have left at the edge of the pastries with the beaten egg
  6. Place the remaining six circles of pastry on top of the filled slices
  7. Seal the edges by pressing down with a fork all the way round the perimeter
  8. Place on a baking sheet lined with parchment paper
  9. Cut a little steam hole in the middle of each pastry

  10. Brush the pastries with the beaten egg

  11. Bake in the oven for about 15 minutes or until golden brown
  12. Mix together the icing sugar and water

  13. Drizzle over the pastries and top with the Christmas sprinkles
