Hello everyone, as Easter weekend is fast approaching I thought I would share my new recipe for Gluten and Dairy Free Easter Marshmallow Cupcakes. Easter baking can be a bit tricky to make dairy free due to all the chocolate involved. I know there is some great dairy free Easter chocolate out there but this year I thought I would try and bake something Eastery but without chocolate.
It kind of worked out but not quite as I had imagined it! I ordered some Easter themed marshmallows online. The picture showed a cute pink and white Easter bunny. Unfortunately what arrived was more of a yellow colour and a bit like a squashed bunny! So if you are looking at the photos of the cupcakes and wondering why they are Easter themed remember the marshmallows are supposed to be Easter bunnies!

I've been in the kitchen baking again. This time I've made this cute little vanilla cupcakes topping with frosting and Easter marshmallows.
Preheat the oven to 180 oC
Beat together the dairy free spread and caster sugar until light and fluffy
Whisk in the eggs one at a time
Stir in the gluten free self raising flour
Divide the mixture between 6 cupcake cases, they should be about 2/3 full
Bake in the oven for 20 minutes
Allow to cool completely
Whisk together the dairy free spread and the icing sugar until creamy
Pipe onto the cupcakes and top with a marshmallow
