I've been in the kitchen baking again. This time I've made this cute little vanilla cupcakes topping with frosting and Easter marshmallows.

    For the cupcakes:
  • 100 grams dairy free spread
  • 100 grams caster sugar
  • 2 eggs
  • 100 grams gluten free self raising flour
  • For the frosting:
  • 150 grams icing sugar
  • 75 grams dairy free spread
  • 6 marshmallows
  1. Preheat the oven to 180 oC

  2. Beat together the dairy free spread and caster sugar until light and fluffy

  3. Whisk in the eggs one at a time

  4. Stir in the gluten free self raising flour

  5. Divide the mixture between 6 cupcake cases, they should be about 2/3 full

  6. Bake in the oven for 20 minutes

  7. Allow to cool completely

  8. Whisk together the dairy free spread and the icing sugar until creamy

  9. Pipe onto the cupcakes and top with a marshmallow
