Chocolate and Peanut Cake (Gluten & Dairy Free)

Ingredients
    For the cake:
  • 150 g dairy free spread
  • 150 g caster sugar
  • 3 eggs
  • 150 g gluten free self raising flour
  • 200 g dairy free dark chocolate
  • 100 g peanuts
  • For the topping:
  • 225 g icing sugar
  • 125 g dairy free spread
  • 25 g cocoa powder
  • 1 tbsp ground peanuts
  • 1 tbsp grated dairy free chocolate
Instructions
  1. Preheat the oven to 160 oC
  2. Grease and line an 8″ round cake tin
  3. Beat together the dairy free spread and caster sugar
  4. Beat in the eggs one at a time
  5. Stir in the flour
  6. Blitz the chocolate and peanuts in a blender or chop into tiny pieces
  7. Stir in the peanut and chocolate mix
  8. Pour into a cake tin and bake for 40 minutes
  9. Remove from the oven and cake tin and allow to cool completely before frosting
  10. Beat together the icing sugar, cocoa powder and dairy free spread until light and fluffy
  11. Cut the cake in half and sandwich the cakes together with half the frosting
  12. Spread the rest on top of the cake and top with the ground peanuts and grated chocolate
