Candy Cane Mousse (Gluten & Dairy Free)

Hello everyone, today's recipe is for Gluten and Dairy Free Candy Cane Chocolate Mousse.

You might boo me for sharing a Christmas recipe before its even December!  This could really be made anytime of the year though as a plain chocolate mint mousse without the Christmas candy cane topping.  I've got a few new seasonal recipes coming up in December including:

Description

Put a festive spin on traditional chocolate mousse with my delicious Gluten and Dairy Free Candy Cane Mousse recipe

Ingredients
  • 400 milliliters Coconut milk
  • 200 grams Dairy free dark chocolate (Roughly chopped)
  • 60 grams Caster sugar
  • 1 teaspoon Peppermint extract
  • 260 grams Silken tofu
  • 70 grams Dairy free milk
  • 100 grams Dairy free whipping cream
  • 1 Candy cane (Crushed)
Instructions
  1. Pour the coconut milk into a saucepan

  2. Bring to the boil and remove from the heat

  3. Stir in the caster sugar, mint extract and dark chocolate

  4. Mix until the chocolate has melted

  5. Pour into a blender with the tofu and dairy free milk

  6. Blitz until smooth and well combined

  7. Pour into 6 ramekins and chill in the fridge for a couple of hours

  8. Whip the dairy free cream and pipe on top of the chocolate mousse

  9. Top with a sprinkle of crushed candy cane
