Curried Green Lentil & Sweet Potato Soup (Gluten Free, Dairy Free)

curry powder

sweet potatoes
(peeled and diced)

can of green lentils
(drained)

litre vegetable stock
salt and pepper for seasoning
Instructions

Place the olive oil in a pan over a medium heat

Add in the garlic, onion and curry powder

Cook until the onion is soft about 5 minutes

Stir in the sweet potatoes and lentils

Pour in the vegetable stock

Bring to the boil and simmer for 15 minutes or until the potatoes are soft

Season with salt and pepper
