- 2 chicken breasts (cut into chunks)
- 3 large handfuls spinach
- 2 tablespoons sun-dried tomatoes
- 1 red onion
- 2 tablespoons dairy free basil pesto
- 150 grams gluten free pasta
- Heat a drizzle of olive oil over a medium heat and stir fry the chicken for about 10 minutes
- Cook the pasta according to the instructions on the packet
- Allow the chicken and pasta to cool
- In a large bowl stir together the chicken, pasta, spinach, tomatoes, onion and pesto
- Divide between two serving bowls and enjoy
