Chicken and Spinach Pasta Salad (Gluten Free, Dairy Free)

Ingredients

chicken breasts
(cut into chunks)

large handfuls spinach

tbsp
sun-dried tomatoes

red onion

dairy free basil pesto

gluten free pasta
Instructions

Heat a drizzle of olive oil over a medium heat and stir fry the chicken for about 10 minutes

Cook the pasta according to the instructions on the packet

Allow the chicken and pasta to cool

In a large bowl stir together the chicken, pasta, spinach, tomatoes, onion and pesto

Divide between two serving bowls and enjoy
