Caramel Apple Cake (Gluten & Dairy Free)
Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Caramel Apple Cake.
Happy Mother' Day to my mum! This year we celebrated it a day early as my Mum and Dad are heading away to Spain for a week on an amazing trip. We went out for a family lunch at our local pub which has a great gluten free menu with lots of options they can easily adapt to be dairy free as well. I opted for chicken fajitas complete with gluten free flour tortillas - delicious.
Today's recipe is for a gluten and dairy free salted caramel apple cake I made a few weeks ago. I love the combination of salted caramel and apple - I've made some cupcakes with these flavours before and wanted to try out a larger cake recipe. A slice of this heated in the microwave for 30 seconds makes a perfect dessert.
For Mother's Day this year I actually made some tiramisu cupcakes which I'll share the recipe for next week.

- 3 eggs
- 100 g caster sugar
- 100 g light brown sugar
- 250 ml vegetable or sunflower oil
- 375 g gluten free self-raising four
- 3 medium to large apples (peeled and diced into small cubes (about 500g))
- 2 tsp cinnamon (optional)
- 150 g dairy free spread
- 150 g icing sugar
- 150 g dairy free caramel sauce – my recipe is here
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 Preheat the oven to 180 oC and line and grease a 9″ round cake tin

Beat together the eggs and two types of sugar- 3
Add in the oil and beat well- 4
Stir in the flour and cinnamon and mix until well combined- 5
Mix in the chopped apples- 6
Pour the cake mixture into the lined/greased baking tin and bake in the centre of the oven for 75 minutes- 7
Remove from the tin and allow to cool completely- 8
Make the frosting by beating together the dairy free spread, icing sugar, caramel sauce and salt until light and fluffy- 9
Spread on top of the cake and dust with a little cinnamoncaramel apple cake - 2
