Instructions

Preheat the oven to 200 oC

Line a muffin tin with 8 paper cases

Whisk together the eggs, milk and melted butter

Stir in the flour, xanthan gum, sugar

Mix until well combined

Stir in the blueberries

Divide the mixture between the eight muffin cases

Bake in the centre of the oven for 25 minutes

Remove from the oven and allow to cool
