- 1 medium sized banana (mashed)
- 110 grams brown sugar
- 55 grams dairy free spread
- 50 grams caster sugar
- 1 egg
- 160 grams gluten free plain flour
- 170 grams gluten free porridge oats
- 1 teaspoon gluten free baking powder
- 100 grams dairy free dark chocolate chips
- Preheat the oven to 180 oC
- Beat together the banana, dairy free spread and both sugars until well combined
- Stir in the egg
- Add the flour, oats, baking soda and chocolate chips
- Drop tablespoons of the mixture onto a lined baking sheet and flatten into cookie shapes
- Bake in the oven for 18 minutes
- Allow to cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely
