  • 230 grams sultanas
  • 225 milliliters water
  • 115 grams soft brown sugar
  • 60 grams dairy free spread
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 100 grams ground rice flour
  • 130 grams gluten and dairy free self-raising flour
  • 2 eggs
  1. Place the sultanas, water, brown sugar, dairy free spread, cinnamon, ginger, nutmeg and baking powder into a large saucepan
  2. Bring to the boil and simmer gently for 12 minutes
  3. Preheat the oven to 180 oC
  4. Allow the mix to cool for about 15 minutes
  5. Stir in the eggs and gluten free flour and mix until well combined
  6. Pour into a 1lb well oiled loaf tin and bake in the centre of the oven for 40 minutes
  7. Remove from the oven and allow to cool completely
  8. The cake can either be served plain or iced
