Ingredients
For the apples:

(peeled and cut into 1/4” cubes)

For the blondies:

Instructions

Preheat the oven to 180 oC

Line an 8” by 8” cake tin with baking paper

Place the chopped apple, brown sugar and dairy free spread in a small saucepan and cook over a medium heat for 5 minutes or until softened

Put the melted dairy free spread, brown sugar and egg in a large bowl

Whisk together then stir in the mixed spice, flour and baking powder

Gently fold in the cooked apple mixture

Pour into the cake tin and bake in the oven for 35 minutes
8
Allow to cool completely in the tin before cutting into squares
