Pizza (Gluten Free, Dairy Free)

    For the pizza bases:
  • 155 grams gluten free bread flour
  • 2 teaspoons dried yeast
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 90 milliliters water (warmed in the microwave for 30 seconds)
  • 2 olive oil
  • For the pizza sauce:
  • 1 clove of garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon of sage
  • 230 grams fresh (ripe tomatoes)
  • 400 grams tin of chopped tomatoes
  • 1 teaspoon sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 tablespoon balsamic vinegar
  • black pepper (to taste)
  • Toppings:
  • handful of dairy free cheese
  • any other toppings you wish (the choice is endless!)
    For the pizza bases:
  1. Mix the dry ingredients together in a large mixing bowl
  2. Stir in the olive oil and water
  3. Beat with a dough hook on an electric blender for 5 minutes or knead by hand
  4. Cover the bowl with cling film
  5. Leave in a warm place for one hour
  6. Remove the dough from the bowl and wrap in the cling film
  7. Refrigerate for one hour
  8. Preheat the oven to 200 oC
  9. Roll out the pizza dough into a 12 " circle
  10. Prick the dough with a fork, this stops air bubbles forming in the dough as it cooks
  11. Bake in the oven for 8 minutes
  12. Remove from the oven and top with the pizza sauce (directions to make are below), dairy free cheese and your choice of toppings
  13. Return to the oven for another 8 minutes or until the toppings are golden
  14. For the pizza sauce:
  15. Place all the ingredients in a large saucepan and bring to the boil with the lid on
  16. Simmer the sauce for 30 minutes and then remove the lid and cook for another 30 minutes stirring occasionally
  17. The sauce should be thick but still juicy
  18. Top the pizza and freeze the rest for future pizzas
