Spiced Banana Gingerbread (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Spiced Banana Gingerbread.

This cake is probably a bit more wintery but I made it a couple of weeks ago when it poured with rain all day and all I wanted was a giant slice of comforting cake.  I have just been able to get icing sugar for the first time since March so I've been baking plainer cakes topped with a sprinkle of icing sugar rather than frosting.

I used to prefer cupcakes with lots of frosting but during the last 4 months of lockdown I've made more cakes like this banana gingerbread.  I thought I was maybe growing up and loosing my sweet tooth but I think it is more to do with the fact I can eat more of it!

Hopefully you like this type of cake too as I have a few recipes like this coming up.  I think the next one I'm due to share is a chocolate chip muffin loaf.

Ingredients
  • 115 grams soft light brown sugar
  • 275 grams gluten free self-raising flour
  • 3 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 60 milliliters sunflower or olive oil
  • 60 milliliters honey
  • 2 eggs
  • 60 milliliters fresh orange juice
  • 3 bananas (mashed)
  • 115 grams sultanas
  • 1 tablespoon icing sugar
Instructions
  1. Preheat the oven to 180 oC and line an 8" baking tin or bundt pan

  2. Beat together the eggs and oil
  3. Stir in the honey and orange juice
  4. Add the sugar, flour, ginger, nutmeg and cinnamon

  5. Mix well to combine
  6. Stir in the mashed bananas and sultanas
  7. Pour into the cake tin and bake in the centre of the oven for 45 minutes
  8. Remove from the oven and allow to cool completely

  9. Dust with the icing sugar before serving
