Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Apple Pie Overnight Oats.

This is the final breakfast recipe in my meal prep series, I’ll share the last lunch recipe tomorrow.  I love my overnight oats as they are so easy to prepare and make a lovely filling breakfast.

This one is based on the apple and cinnamon flavour of a traditional apple pie.  You can either eat it straight from the fridge or pop it into the microwave for a couple of minutes.

Ingredients
  • 100 grams gluten free oats
  • 30 grams cashew nuts (roughly chopped)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons maple syrup
  • 200 milliliters dairy free milk
  • 2 apples
  • 1 teaspoon lemon juice
Instructions
  1. Place the oats, cashew nuts and cinnamon in a bowl
  2. Stir in the maple syrup, milk and one grated apple
  3. Mix until well combined
  4. Split between two tubs
  5. Cut the remaining apple into wedges and toss in the lemon juice
  6. Place on top of the overnight oats
  7. Chill in the fridge and enjoy for breakfast
