- 180 grams quinoa
- 430 milliliters boiling water
- 4 eggs
- 4 tablespoons dairy free cheese (grated)
- 8 cherry tomatoes (halved)
- 1 onion (grated)
- 1 pepper (finely diced)
- salt and pepper (for seasoning)
- 2 teaspoons oregano
- 1 fresh basil leaves (chopped)
- of chilli flakes
- 2 garlic cloves
- Rinse the quinoa with water
- Place in a pan with 430ml boiling salted water
- Cook until the water is absorbed, about 10 minutes
- Preheat the oven to 180 oC
- Place the onion, pepper, chilli and garlic in a shallow pan and sauté for 5 minutes
- Whisk the eggs in a large bowl
- Stir in the cooked quinoa, sautéed vegetables, tomatoes, basil, oregano, cheese and seasoning
- Pour into a greased baking dish
- Bake for 25 minutes
- I served mine topped with some fresh spinach and extra tomatoes
