Gluten and Dairy Free Spicy Tomato Prawns

Ingredients
  

  • 1 tbsp olive oil
  • 1 garlic clove minced
  • 1 red onion diced
  • 1 pepper diced
  • 1-2 tsps sriracha or other chilli sauce
  • 1 tsp brown sugar
  • 220 ml passata
  • 1 tsp oregano
  • salt and pepper for seasoning
  • 150 g prawns peeled and prepped

Instructions
 

  • Place the olive oil in a shallow pan over a medium heat
  • Add the onions, peppers and garlic
  • Saute for 5 minutes
  • Add the prawns and cook for 4 minutes
  • Sprinkle in the brown sugar, chilli sauce, passata, oregano and seasoning
  • Simmer for 3 minutes
  • I served mine with brown rice and avocado
