Gluten and Dairy Free Date and Walnut Cake

Ingredients

  • 200g dates, stones removed and roughly chopped
  • 200ml hot tea
  • 80g dairy free spread
  • 140g light brown sugar
  • 2 eggs
  • 250g gluten free self raising flour
  • 50g walnuts, roughly chopped

Method

  1. Preheat the oven to 180 oC
  2. Grease and line a loaf tin
  3. Soak the dates in the hot tea for 10 minutes
  4. Beat together the dairy free spread and sugar
  5. Whisk in the eggs
  6. Stir in the dates, tea, flour and walnuts
  7. Pour into the loaf tin
  8. Decorate with a few walnut pieces
  9. Bake for 50 minutes
