If you are looking for inspiration for a special Sunday brunch then try my recipe for gluten and dairy free lemon and blueberry waffles. Don’t worry if you don’t have a waffle iron you can use this recipe to make pancakes.

There has been a bit of excitement over the last couple of days as a little hedgehog has been living in the garden, I felt connected to him when I learnt they also had problems with dairy products!

I’m really trying to focus on my upcoming book – Cake, today I’ve been typing up recipes and doing a bit of photography. I made summer berry crumble slices and a dark chocolate and raspberry cake. I think I underestimated how long it would take me to develop, document and photograph 50 new gluten and dairy free cake recipes. I’ll keep you posted on when it will be made available through iTunes and Amazon.

Ingredients

  • 1 egg
  • 115ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 2 teaspoons caster sugar
  • juice of half a lemon
  • zest of one lemon
  • 2 tablespoons blueberries

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour and caster sugar
  3. Stir in the lemon juice and zest
  4. Gently fold through the blueberries
  5. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  6. Alternatively you can use this mix to make pancakes

Hello everyone, hope you are all having a great weekend. It’s festival time in Edinburgh so the city is an exciting place to be in (but very busy)! We are heading into town today to see a few shows and get some great food. To kick start the day I’ve made this brunch using one of my favourite ingredients to cook with – chorizo.

It is such a flavoursome ingredient to add to a dish, this time I’ve combined it with waffles and a fried egg for a little treat. My warning as always when cooking with chorizo is to carefully check the ingredients as some chorizo contains milk. I used the Tesco individual chorizo sausages and they are both gluten and dairy free.

Ingredients

For the waffles:

  • 1 egg
  • 125ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 2 teaspoons mixed herbs

For the toppings:

  • 80g chorizo, make sure it is dairy free
  • 2 eggs

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour and herbs
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Saute the chorizo in a shallow pan for 5 minutes or until caramelised
  5. Fry the eggs in a little olive oil until the yolk is cooked to your preference
  6. Top the waffles with the chorizo and fried egg

I love the warming flavour of spices like cinnamon and ginger and try to put them in everything. When I’m making waffles I usually have a basic recipe I use and add additions to it like chocolate chips, fruit etc. I was feeling a bit adventurous this weekend so decided to have a go at making a brand new waffle recipe that gave a little nod to the gingerbread cake, hope you like it.

You could also use this recipe to make pancakes if you don’t have a waffle iron.

Ingredients

  • 110ml treacle
  • 100ml honey
  • 110g dairy free spread
  • 140ml dairy free milk
  • 1 egg, beaten
  • 250g gluten free plain flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon

Method

  1. Place the treacle, honey and dairy free spread in a pan
  2. Melt over a medium heat then leave to cool slightly
  3. In a large bowl mix together the flour, ginger, cinnamon and baking powder
  4. Stir in the egg, milk and treacle mix
  5. Heat a waffle iron and cook for about 4-5 minutes
  6. Serve with a drizzle of dairy free chocolate sauce

The idea behind this recipe is you get a basic waffle recipe and then 10 ideas on how to customise the recipe. This was one of the first recipes that I posted on the website and when I’ve gone back and looked at it the photographs are terrible. I’m currently working my way through re-photographing the waffles (any excuse to make them again!) so sorry if there are not photos for every recipe yet.

Ingredients

For the Basic Waffle Mix:

  • 140g gluten and dairy free plain flour
  • 70g potato flour or cornflour
  • 2 teaspoons gluten free baking powder
  • 2 tablespoons caster sugar
  • 225ml natural soya yoghurt
  • 42g dairy free spread, melted
  • 1 egg
  • 150ml dairy free milk

Method

  1. To make the waffles, combine all the ingredients in a large bowl and mix until light and fluffy
  2. Heat up your waffle iron and spray with olive oil
  3. Pour the mixture into the waffle iron and cook for 8 minutes until golden brown

1. Waffles with Apple Compote

Apple Waffles

  • Basic Waffle Mix
  • 3 apples, finely grated
  • 2 tablespoons water
  • 1 teaspoon cinnamon, optional

  • Prepare and cook the waffle mix per the basic recipe

  • Put the apple, water and cinnamon in a saucepan and cook on a medium heat for about 5 minutes until the apples are soft, if you prefer the apple compote to be smooth you can blitz it in the blender

2. Chocolate Chip and Nutmeg Waffles

Choc Chip Waffles

  • Basic Waffle Mix
  • 150ml Chocolate Rice Milk
  • 1 teaspoon Nutmeg
  • 100g Dairy Free Chocolate Chips

  • Substitute the dairy free milk with chocolate rice milk, add in the nutmeg and dairy free chocolate chips

3. Dairy Free Yoghurt and Strawberries

  • Basic Waffle Mix
  • dairy free yoghurt, I used a banana alpo soya yoghurt
  • handful of strawberries

  • Make up the basic waffle mix and serve with the dairy free yoghurt for dipping and some fresh strawberries

4. Spiced Pumpkin Waffles

  • Basic waffle mix
  • 4 tablespoons pureed pumpkin
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

  • Add the pureed pumpkin, ginger, cinnamon and nutmeg to the basic waffle recipe prior to cooking

5. Summer Fruit Waffles

  • Basic Waffle Mix
  • 100g Summer Fruits

Add half the summer fruits to the basic waffle mix prior to cooking and place the rest of the summer fruits on top of the waffles prior to serving

6. Banana and Honey Waffles

Banana Waffles

  • Basic waffle mix
  • 3 bananas, mashed
  • 3 tablespoons honey
  • Nutmeg and banana slices for decorating

  • Add the mashed bananas to the basic waffle mix prior to cooking, once cooked decorate with banana slices, drizzle over the honey and dust with nutmeg

7. Peanut Butter and Chocolate Waffles Sandwiches

Peanut Waffles

  • Basic waffle mix
  • 4 tablespoons peanut butter
  • 4 tablespoons dairy free chocolate spread

  • Add the peanut butter to the basic waffle mix prior to cooking

  • Once cooked, spread the waffles with dairy free chocolate spread
  • Sandwich two waffles together and slice diagonally

8. Orange Marmalade Waffles

  • Basic waffle mix
  • 6 tablespoons orange marmalade

  • Add 4 tablespoons of marmalade to the basic waffle mix prior to cooking, use the remaining marmalade to decorate the waffles once cooked

9. Sausage and Chutney Waffle Sandwich

  • Basic waffle mix
  • 2 teaspoons sage
  • 3 gluten and dairy free sausages
  • 2 tablespoons Tomato Chutney

  • Add the sage to the basic waffle mix prior to cooking, grill the sausages, slice into rings, place the sausage slices and chutney between two of the cooked waffles

10. Cinnamon Bun Style Waffles

Cinnamon Bun Waffles

  • Basic waffle mix
  • 100g sultanas
  • 2 tablespoons water
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon caster sugar
  • 4 tablespoons icing sugar mixed with 4 teaspoons lemon juice

  • Prepare and cook the basic waffle mix and in a small saucepan cook the sultanas, spices, water, lemon juice and caster sugar over a medium heat until the sultanas are soft and the liquid is a syrup (about 5 minutes). Spread over the cooked waffles and drizzle on the lemon icing glaze.

Hello Everyone

Hope you are all having a great week, I’m having an amazing time in Iceland. Yesterday I had the pleasure of going dog sledding with the most amazing huskies and today I went into a (dormant) volcano.

Before I went on holiday I went through a phase of making waffles. I tend to do that – not make them for a while and then eat them for a few weeks. I wanted to have a go at a simpler recipe for waffles and I think this recipe ticks the box. My previous waffle recipe had quite a few ingredients including dairy free yoghurt, this one has less ingredients and you can also use this to make pancakes if you don’t have a waffle iron.
