Gluten and Dairy Free Peanut Butter & Jelly Waffle Sandwiches

I’m back going through a phrase of using my waffle iron again – it happens every few months or so!  This time I’ve been making these lovely little peanut butter and jelly waffles sandwiches – they are perfect to enjoy any time of the day.

If you don’t have a waffle iron you can use this recipe to make pancakes and top them with the peanut butter and jelly.

Gluten and Dairy Free Peanut Butter & Jelly Waffle Sandwiches

Serves 2

Ingredients

  • 1 egg
  • 115ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 2 teaspoons caster sugar
  • 1 tablespoon peanut butter
  • 1 tablespoon strwaberry jam

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour and caster sugar
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Sandwich the waffles together using the peanut butter and strawberry jam

Gluten and Dairy Free Herby Waffles with Poached Eggs

serves / makes 2 waffles

10 mins cooking time

Ingredients

  • 3 eggs
  • 125ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 1 teaspoon mixed herbs
  • salt and pepper for seasoning

Method

  1. Beat together one egg, dairy free spread and milk
  2. Whisk in the flour, herbs and seasoning
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Alternatively you can use this mix to make savoury pancakes
  5. Poach the remaining two eggs for 3 minutes and serve with the waffles

Gluten and Dairy Free Chocolate, Cardamom & Strawberry Waffles

Hello

I’m going through a craze of adding warming spices like cardamom and cinnamon to chocolate.  I absolutely love the warmth it adds to the already rich chocolate flavour.

Don’t worry if you don’t have a waffle iron you can use this recipe to make pancakes that will taste just as good.

If you don’t have cardamom you can substitute it for cinnamon or ginger or omit the spice altogether for just chocolate waffles.

Ingredients

  • 1 egg

  • 1/2 teaspoon ground cardamom
  • handful of fresh strawberries

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour and caster sugar
  3. Stir in the cocoa powder and cardamom
  4. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  5. Alternatively you can use this mix to make pancakes
  6. Serve with the strawberries

 

Gluten and Dairy Free Savoury Mexican Waffles

serves / makes 2 waffles
10 mins prep time
10 mins cooking time

Ingredients

For the waffles:

  • 1 egg
  • 125ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 1 teaspoon fajita seasoning
  • Salt and pepper, for seasoning

For toppings:

  • 1 egg
  • 2 tablespoons grated dairy free cheese, I used Violife
  • Fresh coriander

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour, oregano, fajita mix and seasoning
  3. Pour the batter into a pre heated waffle iron and cook for 5 minutes or until golden brown, alternatively you can use this mix to make savoury pancakes
  4. Fry the egg in a little olive oil until crispy at the edges
  5. Top with the grated cheese and coriander

Hello

Thanks everyone for the kind messages you sent about my knee operation.  Everything went well and I’m out of the hospital now – trying to be good and stay off my feet.  Already getting impatient as I want to go into the kitchen and work on a new recipe idea I have.

I’m also a little bit prepared this year and have already photographed a couple of Christmas recipes.  I’m planning to start sharing these on the 1st of December.

These waffles are one of those recipes that I made when I just had a few things left in the fridge before my shopping was delivered.  Turned out to be a pretty tasty lunch so I thought I would share it with you all.  I used Violife cheese which I got in Tesco to make my waffles.

Hope you are all having a great week, I’m having an amazing time in Iceland. Yesterday I had the pleasure of going dog sledding with the most amazing huskies and today I went into a (dormant) volcano.

Before I went on holiday I went through a phase of making waffles. I tend to do that – not make them for a while and then eat them for a few weeks. I wanted to have a go at a simpler recipe for waffles and I think this recipe ticks the box. My previous waffle recipe had quite a few ingredients including dairy free yoghurt, this one has less ingredients and you can also use this to make pancakes if you don’t have a waffle iron.
