Gluten and Dairy Free Soft Chewy Toffee

I was super excited last week to find some dairy free coconut condensed milk which I bought here –>

Finding a dairy free condensed milk has opened up a number of new recipe possibilities for me to try out.

One of things I really miss is soft chewy toffee.  When I was little my parents always bought me a big box of Thornton’s Special Toffee for Christmas every year – I loved the stuff.

This recipe is very easy to make, it doesn’t require sugar thermometers or anything fancy.  I kept my toffee in the fridge to keep it fresh and the perfect chewy consistency.
