Gluten, Dairy and Egg Free Lemon & Poppyseed Scones

Serves 6

Ingredients

  • 50g dairy free spread
  • 225g gluten free self-raising flour
  • 2 tablespoons caster sugar
  • 110ml dairy free milk
  • zest of two lemons
  • 1 tablespoon of poppyseeds

Method

  1. Preheat the oven to 200 oC
  2. In a large bowl place the self-raising flour and caster sugar
  3. Rub in the dairy free spread until it resembles bread crumbs
  4. Stir through the lemon zest and poppyseeds
  5. Add the dairy free milk
  6. Shape into 6 scones
  7. Bake in the centre of the oven for 20-25 minutes

Gluten, Dairy & Egg Free Bacon & Red Onion Scone Round

I made these gluten, dairy and egg free scones to use up the streaky bacon that I had wrapped the turkey in to cook on Christmas day and the leftover red onion from my brussel sprout dish.  Sometimes you end up with great new recipes just using up leftovers from the fridge.

Rather than go with the traditional scone shape I made this into a scone round and served it with soup as an alternative to bread.  You can swap the bacon and red onion for any savoury fillings you like, some dairy free cheddar style cheese would be good but I didn’t have any to add in.

I was super excited to get an artificial light box for my food photography from my sister and brother-in-law for Christmas – thanks guys.  I absolutely loath how using flash or normal artificial light makes my food look orange.  That means I’m restricted to photographing my recipes at the weekend  during the winter as I’m at work when it is light.  This recipe is my first experiment with it, I’m really pleased with the result.

Gluten, Dairy & Egg Free Bacon & Red Onion Scone Round

Ingredients

  • 4 slices streaky bacon, cut into thin stripes
  • 1/2 red onion, diced
  • 1 garlic clove, minced
  • 40g dairy free spread
  • 220g gluten free self-raising flour
  • 1 teaspoon oregano
  • 100ml dairy free milk
  • salt and pepper for seasoning

Method

  1. Preheat the oven to 200 oC
  2. Gently saute the onion, garlic and streaky bacon in a shallow pan for 5 minutes
  3. In a large bowl place the self-raising flour, oregano and seasoning
  4. Rub in the dairy free spread until it resembles bread crumbs
  5. Stir through the bacon and red onion
  6. Add the dairy free milk
  7. Shape into a round about 4cms thick
  8. Score into quarters
  9. Bake in the centre of the oven for 25 minutes

Description

Another version of my gluten, dairy and egg free scones – this time with strawberries and chocolate chips. I enjoyed these scones as an afternoon treat sandwiched together with some dairy free chocolate spread and strawberry jam.

  • 1 teaspoon xanthan gum
  • 2 tablespoons caster sugar
  • 120ml dairy free milk
  • 100g fresh strawberries
  • 50g dairy free dark chocolate chips

Method

  1. Preheat the oven to 200 oC
  2. In a large bowl place the self-raising flour, xanthan gum and caster sugar
  3. Rub in the dairy free spread until it resembles bread crumbs
  4. Stir through the fresh strawberries and chocolate chips
  5. Add the dairy free milk
  6. Shape into 4 scones
  7. Bake in the centre of the oven for 20-25 minutes

Description

I’ve had potato scones on my list of things to make for ages, they make me think of my childhood as my mum loved them. When I finely got round to making them I actually didn’t have any potatoes so I decided to make them using sweet potato. To compliment the flavour of the sweet potato I’ve added in some garlic and rosemary.

These taste great straight from the pan with a little bit of melted dairy free spread.

Ingredients

  • 250g sweet potatoes
  • 50g gluten free plain flour
  • 25g dairy free spread
  • 1 teaspoon garlic paste
  • 1 teaspoon rosemary
  • salt and pepper for seasoning

Method

  1. Peel the sweet potatoes and cut into cubes
  2. Add to a pan of boiling water and cook for 10-15 minutes or until tender
  3. Drain the potatoes and return to the heat to dry them out for 1 minute or so
  4. Mash the potatoes and stir through the dairy free spread, rosemary, garlic and flour
  5. Season with salt and pepper
  6. Flat out the dough to about 1/2cm thick and cut into 6 triangles
  7. Gently fry for a couple of minutes on each side
  8. I ate mine hot with some dairy free spread

I thought I would share with you another take on the traditional scone – raspberry ripple! This recipe is gluten, dairy and egg free.
