Gluten and Dairy Free Salmon Linguine

Hello everyone

This is one of my regular go to pasta dinners.  It has a light creamy sauce, dairy free of course, with beautiful flakes of salmon and fresh herbs.

It is one of those recipes that never fails to disappoint, it also looks and tastes like you went to more effort than you actually did.

To make this recipe I used Tesco FreeFrom Spaghetti and Alpro dairy free cream. I also made the garlic bread in the photo with Warbuton’s gluten free Artisan classic white loaf with crushed garlic and basil mixed into Pure dairy free spread.

Gluten and Dairy Free Salmon Linguine

Gluten and Dairy Free Balsamic Glazed Salmon

Serves 4

Ingredients

  • 125ml balsamic vinegar
  • 25g brown sugar
  • 4 salmon steaks
  • salt and pepper for seasoning

Method

  1. Place the balsamic vinegar and sugar in a small saucepan over a medium heat
  2. Stir until the sugar is dissolved
  3. Bring to the boil and then reduce the heat until it is bubbling gently
  4. Cook for 20 minutes until reduced by about half and is thick and sticky
  5. Preheat the oven to 200 oC
  6. Place the salmon in an oven proof dish
  7. Season with salt and pepper
  8. Brush with the balsamic glaze
  9. Bake for 15 minutes
  10. Brush with a little more balsamic glaze and serve with a leafy salad

I’ve been totally spoiled since coming out of the hospital and my lovely friends sent me a box of gluten and vegan salted caramel brownies from Bad Brownie – well worth checking out if you want a free from treat – they are delicious.

Gluten and Dairy Free Ginger Soy Salmon with Noodles

Ingredients

  • 150g gluten free noodles
  • 2 salmon steaks
  • 2 tablespoons sesame oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon Chinese 5 spice
  • 1 teaspoon dried chilli flakes
  • 1 teaspoon ground ginger
  • 1 small onion, finely diced
  • handful of green beans, finely sliced
  • handful of fresh coriander
  • 3 tablespoons, gluten free soy sauce
  • salt and pepper for seasoning

Method

  1. Cook the noodles per the instructions on the packet
  2. Heat the sesame oil in a wok or large shallow pan
  3. Add the garlic, 1/2 teaspoon chilli, 1/2 teaspoon ground ginger and 5 spice
  4. Add in the vegetables and stir fry for 4 minutes
  5. Season with salt and pepper
  6. Add in the noodles and soy sauce
  7. Cook for a further 2 minutes
  8. Use the remaining chilli, ginger and seasoning to sprinkle on the salmon and cook for about 4 minutes on each side in a hot pan
  9. Serve the noodles with the salmon and some fresh coriander

 

Gluten and Dairy Free Salmon and Sweet Potato Curry

Hello everyone

I’ve been working on a few new main meal recipes so I’ll be sharing those with you over the next few weeks.  The first of them is for a salmon and sweet potato Thai curry.  The sweet potatoes and salmon are cooked in coconut milk with lots of spices for a beautifully flavoursome dish.

It doesn’t take long to make and can also be reheated the next day if you have leftovers.

Gluten and Dairy Free Salmon and Sweet Potato Curry

Gluten and Dairy Free Salmon and Sweet Potato Curry

Serves 2

Ingredients

  • 1 onion, finely diced
  • 1 teaspoon ground lemongrass
  • 1 teaspoon ground ginger
  • 400ml can of coconut milk
  • 2 medium sized sweet potatoes, peeled and cut into small cubes
  • 2 salmon steaks, cut into chunks
  • 2 tablespoons gluten free soya sauce
  • 1 teaspoon dark brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon fresh coriander, chopped

Method

  1. Heat a drizzle of olive oil in a shallow pan
  2. Add in the onion, lemongrass, ginger and garlic
  3. Saute for 5 minutes
  4. Stir in the thai curry paste and coconut milk
  5. Bring to the boil then turn down the heat until it is simmering gently
  6. Add in the sweet potatoes and cook until tender, about 10 minutes
  7. Add in the salmon and cook for a further 5 minutes
  8. Stir in the soya sauce, sugar, lime juice and coriander
  9. Season with salt and pepper
  10. Serve with sticky Thai rice

Gluten and Dairy Free Herby Salmon with Pesto Penne

As promised last week I’m going to share more savoury recipes after the abundance of sweets treats I posted in December.  Don’t worry though I’ll still be posting sweet recipes just mixed in with a few more savoury ones.

You can simplify this recipe by buying dairy free pesto which is readily available from your supermarket.

Gluten and Dairy Free Herby Salmon with Pesto Penne

Gluten and Dairy Free Herby Salmon with Pesto Penne

serves / makes 2

Ingredients

For the salmon:

  • 2 salmon steaks
  • 1 teaspoon grated lemon zest
  • 1 teaspoon parsley
  • 1 teaspoon dill
  • 1 teaspoon oregano
  • salt and  pepper for seasoning

For the pesto:

  • 3 large handfuls of fresh basil leaves
  • 110ml extra virgin olive oil
  • 2 tablespoons pine nuts
  • 3 garlic cloves minced
  • salt and pepper for seasoning

Other:

  • drizzle of olive oil
  • 1 onion, finely diced
  • 1 red or green pepper, sliced
  • 150g gluten free pasta, cooked per instructions on packet

Method

  1. Gently pat the salmon steaks dry with a piece of kitchen paper
  2. Mix together the lemon zest, parsley, dill, seasoning and oregano
  3. Sprinkle on the salmon steaks
  4. To make the pesto place the basil, pine nuts and garlic in a blender
  5. While blending, drizzle in the olive oil
  6. Season to taste
  7. Heat a drizzle of olive oil in shallow pan
  8. Saute the onion and pepper until soft, about 5 minutes
  9. Stir in the cooked pasta and as much of the pesto that suits your individual tastes, start with a tablespoon and add from there
  10. Cook the salmon for about 3 minutes on each side in a hot frying pan
  11. Serve the salmon steaks on top of the pasta

 

Gluten and Dairy Free Sweet Potato Chilli Salmon Patties

serves / makes 2

Ingredients

  • 2 salmon steaks
  • 500g sweet potatoes, peeled and cut into chunks
  • 1 small onion, finely diced
  • 1 small red chilli, deseeded and finely chopped
  • 1 garlic clove, minced
  • salt and pepper for seasoning

Method

  1. Preheat the oven to 180 oC
  2. Season the salmon steaks with salt and pepper
  3. Bake in the oven for about 12 minutes
  4. Remove from the oven, remove the skin and flake into chunks
  5. Boil the sweet potato chunks for about 15 minutes in a pan of salted water
  6. Drain away the water and mash the potatoes
  7. Gently fry the diced onion, garlic and chilli for about 3 minutes
  8. Mix together the flaked salmon, sweet potato and onion mix
  9. Season to taste with salt and pepper
  10. Shape into 4 small patties
  11. Gently fry in a shallow pan for about 5 minutes on each side
