Gluten and Dairy Free White Chocolate and Raspberry Cakes

Hello everyone

Today is my birthday so I thought would post a cake recipe.  This isn’t actually my birthday cakes though – I have a night off.  We are having an Edinburgh favourite of La Favourita pizzas (they do an azmaing gluten free pizza with vegan cheese) and a Sainsbury’s free from chocolate cake.

I am making a birthday cake for my niece and I to share on Saturday – going to make a bigger version of these little cakes.  I love making chocolate cigarillos, very relaxing.  I’m off to have my pizza, have a good evening.

Gluten and Dairy Free White Chocolate and Raspberry Cakes

Serves 4

Ingredients

For the cakes:

  • 100g caster sugar
  • 100g dairy free spread
  • 2 eggs
  • 100g gluten free self raising flour

To decorate the cakes:

Directions

  1. Grease four individual Victoria sandwich tins
  2. Preheat the oven to 180 oC
  3. Whisk together the dairy free spread and caster sugar until light and fluffy
  4. Whisk in the eggs one at a time
  5. Stir in the flour
  6. Divide between the four cake tins and bake in the oven for 20 minutes
  7. Allow the cakes to cool completely
  8. Cut in half and spread with the raspberry jam
  9. Sandwich the cakes back together
  10. Make the buttercream by beating together the icing sugar and dairy free spread
  11. Spread the buttercream over the top and sides of the cakes
  12. Place the cigarellos round the outside of the cake
  13. Top with the fresh raspberries and refrigerate until you are ready to enjoy

Hope you have all had a lovely weekend.  I thought I would share this easy recipe for some gluten and dairy free breakfast bars with a fun raspberry centre.  Actually they are suitable for anytime of the day not just breakfast.

These types of bars are exactly what I love for breakfast during the week, usually along with a dairy free yoghurt and followed by a giant coffee.  They can be made on Sunday night and require minimal effort in the morning.

I am hoping to find sometime later to make some granola for this weeks breakfast, if successful I’ll share the recipe in the next week or so.

Gluten and Dairy Free Raspberry Breakfast Bars

serves / makes 9

35 mins cooking time

Ingredients

For the bars:

  • 190g gluten free self raising flour
  • 190g brown sugar
  • 120g gluten free oats
  • 2 teaspoons ground cinnamon
  • 170g dairy free spread

For the raspberry filling:

  • 450g raspberries
  • 50g brown sugar
  • juice and zest of one lemon
  • 1 teaspoon ground cinnamon
  • 2 tablespoons gluten free plain flour
  • 30g dairy free spread, melted

Method

  1. Preheat the oven to 180 oC
  2. Grease and line a 8″ by 8″ cake tin
  3. Mix together the flour, brown sugar, oats and cinnamon in a large bowl
  4. Rub in the dairy free spread
  5. Press half the mixture into the bottom of the cake tin
  6. Bake for 15 minutes
  7. Mix together the raspberries, brown sugar, kimono juice and zest, cinnamon, flour and melted dairy free spread
  8. Pour over the base and top with the remaining oat mix
  9. Bake for 35 minutes
  10. Allow to cool completely and cut into bars
