Sometimes you have to look for the positives in a situation and one of the positives of coeliac disease for me is being forced to try new foods. Quinoa is something I hadn’t tried before my diagnosis but now I’m a real convert. Cutting out gluten completely has made me experiment with new grains for making my porridge style snacks in the morning. I’ve already shared my recipe for banana and cinnamon quinoa pudding and this is my new version – chocolate and berry. Of course I’ve topped it with my favourite dairy free ChocShot sauce.

Ingredients

For the quinoa:

  • 85g quinoa
  • 240ml dairy free milk
  • 2 teaspoons cocoa powder
  • 2 tablespoons maple syrup

Toppings:

  • 1 tablespoons dairy free chocolate chips
  • 1 tablespoon raspberries
  • 1 tablespoon blueberries
  • drizzle of dairy free chocolate sauce

  1. Place the quinoa, dairy free milk, cocoa powder and maple syrup in a saucepan
  2. Bring to the boil and simmer for about 20 minutes or until the liquid has been absorbed
  3. Serve topped with chocolate chips, raspberries, blueberries and a drizzle of chocolate sauce

This morning I decided to try and make a breakfast style oatmeal dish from quinoa and I’ve paired it up with banana and cinnamon for a tasty filling breakfast.

Ingredients

  • 175ml water
  • 65g quinoa
  • 235ml dairy free milk
  • 1 banana
  • 2 teaspoons honey/agave
  • 1 teaspoon ground cinnamon

Method

  1. Bring a pan of water to the boil then add the quinoa
  2. Simmer until all the water has been absorbed, about 15 minutes
  3. Place the milk, banana, honey/agave and cinnamon in a blender and blitz until smooth
  4. Pour the banana milk mixture into the pan with the quinoa
  5. Simmer for about 10 minutes or until it reaches a thick consistency

Gluten and Dairy Free Baked Chicken and Chorizo Quinoa

serves / makes 2

Ingredients

  • 2 chicken breasts, cut into chunks
  • 2 garlic cloves, minced
  • 2 teaspoons basil
  • 1 teaspoon oregano
  • 1 teaspoon chives
  • 250ml chicken stock
  • 1 onion, finely diced
  • 1/4 teaspoon chilli flakes
  • 1 pepper, diced
  • 6 cherry tomatoes, halved
  • 150g quinoa
  • 1 teaspoon smoked paprika
  • 100g chorizo, diced (make sure it is dairy free)
  • salt and pepper for seasoning

Method

  1. Cook the chicken, garlic, basil, oregano, chives chilli flakes and paprika in a little olive oil for 12-15 minutes
  2. Add in the diced onion, peppers, chorizo and cook for another 5-8 minutes
  3. Wash and rinse the quinoa
  4. Bring the chicken stock to the boil in a medium sized saucepan
  5. Add the quinoa, cover and cook until the stock is absorbed, about 15 minutes
  6. Preheat the oven to 180 oC
  7. Mix the quinoa into the chicken and vegetables
  8. Stir through the cherry tomatoes and season with salt and pepper
  9. Place in one large or two small individual casserole dishes
  10. Drizzle with a little olive oil and then bake for 10 minutes
  11. Serve with a fresh salad

Gluten and Dairy Free Baked Chicken and Chorizo Quinoa

Hello everyone

Quinoa is a great alternative to traditional grains as it is naturally gluten free. Just be careful when you are buying your chorizo that it is dairy free as I’m seen a few with milk powder in them. I have recently bought chorizo from Lidl, Asda and Marks and Spencer that didn’t contain milk so hopefully it shouldn’t be too hard for you to find.

This is another recipe you can customise to suit your tastes, it can easily be made vegetarian or you could change the meat or spices used.
